This log is one of the most popular French dessert towards the end of the year, when you see all the pâtisserie shops’ windows with an endless display of them!
This is my version: a génoise biscuit drenched in syrup and filled with chestnut mousse and pear chunks, rolled up and covered in dark chocolate ganache to give it the finished look of a real log.
A real crowed pleaser that will definitely impress!

Chestnut mousse, pear & chocolate log
Ingredients for the génoise
- 5 medium eggs
- 90g sugar
- 150g plain flour, sifted
- ¼ tsp baking powder
- 1 tsp vanilla paste
- 1 pinch of salt
Ingredients for the mousse
- 200g double cream
- 200g chestnut spread
- 1 pinch of salt
Ingredients for the ganache
- 65ml double cream
- 50g dark chocolate
Other ingredients
- 1 small can pear halves in syrup, cut into chunks – save the syrup & save one half in slices to decorate
- chocolate balls
Method for the biscuit
- In the bowl of a stand mixer, beat the eggs and sugar together until they triple in volume. Add the vanilla and beat again.
- Add the flour, baking powder and salt, and gently incorporate with a spatula, being careful not to lose the volume.
- Pour into a lined baking sheet and bake for 10 minutes in a preheated oven at 180°C. When baked, leave to cool and roll over with the baking parchment. Leave rolled.
Method for the chestnut mousse + filling & rolling
- Whip the cream to soft peaks and add to the chestnut spread (add 1 pinch of salt) in 3 to 4 times.
- Unroll the biscuit and turn it over onto another sheet of parchment. Peel the other baking parchment off. Drench with about 2/3 of the pear syrup from the can.
- Spread the chestnut mousse over the surface of the biscuit and add the pear chunks on top. Roll again, as tightly as you can. Leave in the fridge while you prepare the ganache.
Method for the ganache + covering & decorating
- Bring the cream to the boil and pour over the chocolate. Leave for 1 or 2 minutes and stir with a spatula until smooth and glossy.
- Cut the ends off the log and transfer onto the serving plate. Protect the plate’s surface that is exposed with baking parchment and spread the ganache over the log. Remove the parchment. Finish off with the reserves sliced pear half and chocolate balls.
- Refrigerate the log until service.

Ma version marie des saveurs de saison, avec une génoise imbibée de sirop, une mousse aux marrons, des poires et bien évidemment du chocolat noir !

Bûche marron, poire & chocolat
Ingrédients pour la génoise
- 5 oeufs
- 90g de sucre
- 150g de farine, tamisée
- ¼ de càc de levure chimique
- 1 càc d’extrait de vanille
- 1 pincée de sel
Ingrédients pour la mousse
- 200g de crème entière liquide
- 200g de crème de marrons
- 1 pincée de sel
Ingrédients pour la ganache
- 65g de crème entière liquide
- 50g de chocolat noir
Autres ingrédients
- 1 petite boite de poires au sirop, en cubes – réserver une moitié pour la déco en tranches & réserver le sirop
- des billes de chocolat
Méthode pour la génoise
- Battre les oeufs et le sucre dans le bol d’un robot patissier jusqu’à ce qu’ils soient mousseux et qu’ils triplent de volume. Ajouter la vanille et battre encore.
- Ajouter la farine, la levure et le sel, et incoporer très délicatement avec une spatule sans perdre le volume.
- Verser dans une plaque chemisée et cuire 10 minutes dans un four préchauffé à 180°C. Sortir du four et laisser refroidir. Rouler le biscuit en gardant le papier de cuisson.
Méthode pour la mousse + garnissage & roulage
- Monter la crème et l’incorporer en plusieurs fois à la crème de marrons.
- Dérouler le biscuit et le retourner sur une autre feuille de papier cuisson. Retirer la première feuille. Imbiber avec environ 2/3 du sirop des poires.
- Garnir le biscuit de mousse sur toute la surface et parsemer de poires en cubes. Rouler le biscuit aussi serré que possible. Réfrigérer pendant la préparation de la ganache.
Méthode pour la ganache + couverture & déco
- Faire bouillir la crème et la verser sur le chocolat coupé en morceaux dans un bol. Laisser 1 ou 2 minutes puis mélanger avec une spatule pour obtenir une ganache lisse et brillante.
- Couper les bouts de la bûche et transférer sur le plat de service. Couvrir les parties du plat exposée avec du papier de cuisson et recouvrir la bûche de ganache. Retirer le papier et finir la déco avec la poire en tranches et les billes de chocolat.
- Réfrigérer jusqu’au moment de servir.
Hummm, le chocolat et la poire me font fondre. J’adore ce mélange et la photo est bien gourmande. J’en mangerais bien un morceau.
