The first time I had a mushroom burger was in New York, when I tried Shake Shack‘s ‘Shroom Burger, in their Grand Central Terminal branch. I found it delectable (the mushroom is breaded and stuffed with cheese!!), and it changed my mind on burgers having to be meaty! This vegetarian burger is packed with flavours and because the portobello mushroom is quite fleshy and meaty anyway, you won’t miss your usual beef or chicken, I promise.
I like to accompany this with nice sweet potato wedges and my home made mayonnaise.
I say Miam Miam & Yum to that! Do you?
Portobello mushroom & veg burger
Ingredients
- 2 burger buns
- 4 portobello mushrooms, without the stalk and cleaned
- 1 garlic clove, sliced very thinly
- 2 tbsp olive oil
- 2 slices cheddar cheese
- ½ an avocado, sliced
- a few of my slow-roasted tomatoes
- 2 tbsp of my 30-seconds mayo
- salt & pepper
- a few parsley leaves
- ½ a small red onion, in thin slices
Method
- Place the mushrooms in an oven proof dish. Season, add the garlic in the cavities and the olive oil. Bake for 5 minutes in a preheated oven at 200°C. Remove the garlic, add the cheese over the mushrooms and leave to melt.
- Prepare the buns by dividing and stacking all the ingredients and enjoy!
